After all of the positive feedback I received from my last post, I decided to create and add a series of different recipe posts to my blog.
This specific series will be entitled “Healthy Snacks for Kids”, and I will be posting different healthy alternatives to popular snacks for kids, for my working and stay-at-home moms.
Every mom can agree that they want what’s best for their children. Here is a healthy, fun and quick way to treat your kids the right way. This recipe has been tried and proven so give it a try! It’s super simple and easy to make so let’s get started:
You will need:
- muffin tray (12 or 24 hole tray)
- 2 mixing bowls
- whisk
- wooden spatula
- measuring utensils
- Olive oil cooking spray
Ingredients:
- 1 1/2 cup, and 1 tbsp white whole wheat flour
- 3/4 cup rolled oats (or granola)
- 1/2 cup brown sugar
- 1 tbsp baking powder (aluminum free)
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup almond milk
- 1/4 cup unsalted butter
- 2 large eggs (cage-free)
- 1 tsp vanilla extract
- 1 cup fresh blueberries (or freeze-dried blueberries)
Directions:
- Preheat oven to 400 degrees F
- In 1 mixing bowl: stir flour, rolled oats, sugar, baking powder, cinnamon and salt
- In the other mixing bowl: whisk almond milk, butter, eggs, and vanilla
- Make a opening in the the middle of the dry mix and add the wet mixture
- Stir all ingredients together until you get a creamy mixture
- Add blueberries to mixture along with 1 tbsp of extra flour
- Spray muffin tray with olive oil cooking spray
- Add mixture to tray and bake for 18-20 minutes
