Healthy Snacks for Kids: Blueberry Muffins

Hey guys!

After all of the positive feedback I received from my last post, I decided to create and add a series of different recipe posts to my blog.

This specific series will be entitled “Healthy Snacks for Kids”, and I will be posting different healthy alternatives to popular snacks for kids, for my working and stay-at-home moms.

Every mom can agree that they want what’s best for their children. Here is a healthy, fun and quick way to treat your kids the right way. This recipe has been tried and proven so give it a try! It’s super simple and easy to make so let’s get started:

You will need:

  • muffin tray (12 or 24 hole tray)
  • 2 mixing bowls
  • whisk
  • wooden spatula
  • measuring utensils
  • Olive oil cooking spray

  • 3/4 cup rolled oats (or granola)
  • 1/2 cup brown sugar

  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup almond milk
  • 1/4 cup unsalted butter
  • 2 large eggs (cage-free)
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries (or freeze-dried blueberries)

  1. Preheat oven to 400 degrees F
  2. In 1 mixing bowl: stir flour, rolled oats, sugar, baking powder, cinnamon and salt
  3. In the other mixing bowl: whisk almond milk, butter, eggs, and vanilla
  4. Make a opening in the the middle of the dry mix and add the wet mixture
  5. Stir all ingredients together until you get a creamy mixture
  6. Add blueberries to mixture along with 1 tbsp of extra flour
